Seasonal Sweets - Chocolate Zucchini Cake


It’s that time of year again when the zucchinis seem to be multiplying, and you find yourself leaving them on all of your neighbours' doorsteps. This recipe will not only have them begging for more zucchini but also a great way to get your kids to enjoy it!


Chocolate Zucchini Cake

(Recipe Origins unknown. It was given to me by my Mother)

Dry Ingredients

2 ½ cups Flour ¾ cup Butter

½ cup Cocoa 2 cups sugar

2 ½ tsp Baking Powder 3 Eggs

1 ½ tsp Baking Soda 2 tsp Vanilla

1 tsp Salt 2 cups Grated Zucchini

1 tsp Cinnamon 1 cup Milk


Combine all ingredients from the Dry list.

In a separate bowl, cream together the sugar and the butter.

Add eggs to creamed mixture one at a time and mix in.

Add in the Vanilla, Grated Zucchini, and milk.

Mix the wet mixture with the dry ingredients.

Pour into a greased bundt pan and bake at 350 degrees for 1 hour.


When the cake is out of the oven and cooled completely, you may glaze or ice it as you wish.


Glaze Recipe

2 cups Icing Sugar

2 Tbsp Milk

1 Tsp Vanilla


Mix all ingredients and drizzle over the cake. Add more milk if the icing is too stiff. Add more Icing sugar if the icing becomes too thin.
