Rice Pudding Recipe from Erskine United Church Cookbook 2001

Put rice and 3 1/2 cups milk in double broiler and cooke about 1 hour. Add raisins that have been soaked in water a few minutes. Cook till rice is tender, about 2 hours. Add sugar, nutmeg, salt and vanilla. Beat egg with a fork in a cup, add hot milk from pudding. Stir well and add to pudding. Let cook a few minutes longer.


1/4 Cup Rice (no instant rice)

3/12 Cups of Milk

1/2 Cup Raisins

1/3 Cup Sugar

1/4 tsp Nutmeg

1/4 tsp Salt

1 Tbsp Vanilla

1 egg beaten

1 tbsp hot milk, from pudding
